Ingredients (for 1 serving – approx. 3 pancakes):

✔ 1 ripe banana
✔ 2 eggs
✔ 30 grams oatmeal
✔ 1 scoop (30g) protein powder (preferably vanilla or unflavored)
✔ ½ tsp baking powder
✔ 1 tsp cinnamon (optional)
✔ Dash of almond milk or skim milk (if needed for better consistency)
✔ Coconut oil or olive oil for frying

 

Instructions:

Mixing the batter: Mash the banana and mix it with the eggs. Add the oatmeal, protein powder, baking powder, and cinnamon. Blend everything with a blender or hand mixer until a smooth batter is formed. If necessary, add a small dash of milk to thin the batter slightly.

Frying: Heat a pan over medium heat and add a little coconut oil or olive oil. Spoon small amounts of batter into the pan and cook the pancakes for 2-3 minutes per side, until golden brown.

Serving: Serve the protein pancakes with fresh fruit, a dollop of Greek yogurt, or a little honey for extra flavor. You can also top them with nut butter for added healthy fats.
